I typically write on LEUCHTTURM1917 notebooks, either the [[Bullet Journal]] variant or their thicker 206-page book. The paper is significantly higher quality than Moleskine however it struggles to retain shape when I leave it open on my desk. I've seen strong recommendation for [Rhodia](https://rhodiapads.com/) and [Midori MD Notebook](https://www.jetpens.com/Midori-MD-Notebook-Journal-A5-Dot-Grid/pd/26421) notebooks and will try one of those next. Both suggestions apparently come from fountain-pen users, but I primarily write with [[Mechanical Pencils]]
